Super Easy Air Fryer Ratatouille
Simple and Delicious Ratatouille Recipe Using Eggplant
This is a French dish called Ratatouille, where eggplant, zucchini, and tomatoes are layered and baked, then served with tomato sauce and cheese. It can be easily made using an air fryer.
Ingredients- 1/2 eggplant
- 1/2 zucchini
- 1 tomato
- 7-8 Tbsp tomato sauce
- A little olive oil
- A little Grana Padano cheese
- A little parsley flakes
Cooking Instructions
Step 1
First, wash the eggplant, zucchini, and tomato thoroughly. Pat them dry, then thinly slice them, about 0.5 cm thick. Slicing them uniformly will ensure they cook evenly.
Step 2
Spread 7-8 tablespoons of tomato sauce evenly on the bottom of an oven-safe dish or an air fryer-safe container. This sauce will add moisture and flavor to the vegetables. Next, arrange the sliced eggplant, zucchini, and tomato on top of the sauce, alternating them in a decorative pattern. Layering them like flower petals will make the dish look even more appealing.
Step 3
Lightly drizzle olive oil over the arranged vegetables. Olive oil enhances the vegetables’ natural flavors and helps them cook to a tender consistency. Place the dish in a preheated air fryer and cook at 200°C (390°F) for about 20 minutes. Cooking times may vary depending on your air fryer model, so check to ensure the vegetables are tender and slightly golden around the edges.
Step 4
Carefully remove the dish from the air fryer once cooked, being mindful of the heat. Generously grate Grana Padano cheese (or Parmesan cheese) over the top. The melting cheese will add a rich, savory flavor. Finally, sprinkle a little parsley flakes for a touch of color and aroma. Your delicious Ratatouille is ready! Serve immediately while warm to enjoy the tender vegetables and creamy cheese.
