Ingredients

  • 150g blood sausage liver (Sunda-gan)
  • 2 eggs
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 1 pinch of salt
  • 1 Tbsp cooking wine (Mirin or similar)
  • A little cooking oil
  • A little starch (e.g., potato or corn starch)

Cooking Instructions

Step 1

First, gather all the ingredients to prepare for making these delicious Sunda-gan Jeon. Fresh ingredients are the foundation of great taste.

Step 1

Step 2

If you purchased pre-steamed whole blood sausage liver, it will be easier to work with. Slice the liver thinly for pan-frying. Ensuring uniform thickness will help it cook evenly.

Step 2

Step 3

The Korean green chili peppers will add a spicy kick and aromatic flavor. Remove the seeds and slice them diagonally into attractive pieces. You can adjust the amount of chili peppers according to your preference for spiciness.

Step 3

Step 4

Now, let’s make the egg wash. In a clean bowl, crack in the 2 eggs. It’s important to remove the chalazae (the white, stringy bits) from the yolks to ensure a smooth texture. Add a pinch of salt to season the eggs and 1 tablespoon of cooking wine to eliminate any potential gamey smell. Whisk everything together until well combined.

Step 4

Step 5

Lightly coat each thin slice of the prepared blood sausage liver with starch on both sides. This starch layer will help the egg batter adhere better and contribute to a crispier final pancake.

Step 5

Step 6

Next, dip the starch-coated blood sausage liver slices into the egg wash you prepared. Ensure each piece is fully coated with the egg batter. This creates the delicious golden outer layer.

Step 6

Step 7

Heat a pan over medium heat, then add a little cooking oil. Once the oil is moderately hot, reduce the heat to low. Carefully place the egg-coated liver slices into the pan, making sure they don’t overlap. Spacing them out allows each pancake to cook evenly and turn a beautiful golden brown.

Step 7

Step 8

Immediately after placing the liver slices in the pan, top each one with a piece of the sliced Korean green chili pepper. The chili’s spice will meld with the oil, creating a richer flavor profile.

Step 8

Step 9

Gently fry the pancakes, flipping them once they’re golden brown on one side. Continue cooking until both sides are a beautiful, appetizing golden-brown color. Cooking them slowly over low heat ensures they cook through without burning. Once perfectly cooked, your Sunda-gan Jeon is ready! Serve them warm with a side of soy-vinegar dipping sauce for an extra burst of flavor. This is a perfect treat for the New Year, special occasions, or simply as a delightful snack!
