A project to support local agricultural and marine products by the Ministry of Agriculture, Food and Rural Affairs, in collaboration with ‘Matnamui Gwangjang’! Gongju isn’t just about chestnuts, you know! Introducing another of Gongju’s specialties: strawberries. Gongju is known for its ‘Seolhyang’ variety of strawberries, which have low acidity and high sweetness, making them perfect for desserts. Enjoy this sweet strawberry tiramisu, made with seasonal strawberries and creamy cheese!
Strawberry Mixture Ingredients- 300g fresh strawberries (wash thoroughly, remove stems, and chop into bite-sized pieces)
- 20g granulated sugar (enhances the sweetness of the strawberries and adds a slight thickness)
- 20g lemon juice (brightens the strawberry flavor and helps maintain their vibrant color)
Creamy Cheese Filling- 90g mascarpone cheese (provides the rich and deep flavor of tiramisu)
- 60g sweetened condensed milk (adds a smooth sweetness and adjusts the cream’s consistency)
- 30g heavy cream, cold (adds a light and fluffy texture)
- 20g fresh lemon juice (cuts through the richness of the cheese and adds a refreshing zest)
- A few apple mint leaves (for garnish, adds a refreshing aroma and beautiful visual appeal)

Cooking Instructions

First, let’s prepare the strawberry mixture. Take the 300g of fresh strawberries, wash them, remove the stems, and chop them into bite-sized pieces into a bowl. Add 20g of granulated sugar and 20g of lemon juice. Gently toss everything together. The strawberries will release their natural juices, dissolving the sugar to create a syrup. Let it sit for a moment, and your delicious strawberry mixture is ready!

In a separate bowl, combine 90g of mascarpone cheese, 60g of sweetened condensed milk, 30g of cold heavy cream, and 20g of lemon juice for a touch of freshness.
