Easy ‘Yeolmu Bibim Guksu’ Recipe Using Crisp ‘Yeolmu Kimchi’

Main Ingredients
- 200g Somyeon noodles (for 1-2 servings)
- 1 Egg (hard-boiled)
- 1/2 Cucumber (julienned)
- 1 Tomato (julienned, or cherry tomatoes)
- 1 bowl of well-fermented Yeolmu Kimchi solids (with a little brine)
Special Bibim Sauce
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (soy sauce)
- 1 Tbsp minced garlic
- 1 Tbsp fine red chili powder
- 4 Tbsp vinegar
- 3 Tbsp Maesil Cheong (plum extract syrup – adjust sweetness)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Jin Ganjang (soy sauce)
- 1 Tbsp minced garlic
- 1 Tbsp fine red chili powder
- 4 Tbsp vinegar
- 3 Tbsp Maesil Cheong (plum extract syrup – adjust sweetness)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare Optional Ingredients: Add sliced onion or green chili peppers for a spicier kick. If you enjoy a tangier flavor, sliced plums or cherry tomatoes also work wonderfully. However, well-fermented ‘Yeolmu Kimchi’ alone creates a perfectly delicious dish.
Step 2
Boil Egg & Prep Vegetables: Hard-boil the egg until fully cooked. Wash the cucumber, remove the seedy core, and julienne it thinly. Similarly, julienne the tomato after removing its core.
Step 3
Make the Delicious Sauce: This sauce is incredibly versatile, perfect not only for ‘Yeolmu Bibim Guksu’ but also for regular spicy mixed noodles or ‘Jjolmyeon’! Combine Gochujang, soy sauce, minced garlic, fine chili powder, vinegar, plum extract syrup, sesame oil, and toasted sesame seeds in a bowl. Mix them thoroughly until well combined. For extra sweetness, add more plum extract syrup. If you prefer to use sugar instead of plum extract, add about 2 tablespoons and adjust to your taste.
Step 4
Cook the Noodles: It’s crucial to cook the ‘Somyeon’ noodles properly for ‘Bibim Guksu’. Bring a pot of water to a boil. Add the noodles, and as the water starts to boil again, add about a cup of cold water. Repeat this process 2-3 times until the noodles are perfectly cooked and chewy. Overcooked noodles will become mushy. Once cooked, drain the noodles in a colander, rinse them thoroughly under cold running water to remove excess starch, and rub them gently to enhance their chewy texture. Rinsing and rubbing under cold water is key to achieving the best texture.
Step 5
Mix with ‘Yeolmu Kimchi’: Place the drained noodles in a mixing bowl. Add a generous amount of your prepared ‘Yeolmu Kimchi’ solids on top. Spoon in your special bibim sauce. Mix everything together gently but thoroughly until the noodles and kimchi are well coated with the sauce. Be mindful not to add too much kimchi brine, as it can make the dish too watery.
Step 6
Finishing Touch: Drizzle a teaspoon of sesame oil over the noodles and sprinkle with toasted sesame seeds. This adds a lovely nutty aroma and flavor.
