Noodle Ingredients
- Capellini noodles 90g (or your favorite thin pasta)
- 2 ripe tomatoes
- 1 leaf of cabbage (thinly sliced)
- 4 fresh perilla leaves (shredded finely)
- 1 hard-boiled egg (halved, for garnish)
For Boiling Noodles
- Water 1L
- 10g coarse salt (approx. 1 Tbsp)
- Water 1L
- 10g coarse salt (approx. 1 Tbsp)
Cooking Instructions
Step 1
Start by washing the tomatoes. Make a shallow ‘X’ cut on the bottom of each tomato. Briefly blanch them in boiling water for about 10-20 seconds, just until the skin starts to peel. Immediately transfer them to cold water to stop the cooking. Peel the tomatoes, remove the cores, and pat them dry.
Step 2
In a blender, combine the peeled tomatoes and all the ingredients for the ‘Special Tomato Bibim Sauce’: Beomil Gochujang (1 Tbsp), rice vinegar (2 Tbsp), oligodang (2 Tbsp), gochugaru (1/2 Tbsp), sugar (1 tsp), salt (1/4 tsp), cider (2 Tbsp), sesame oil (1/2 Tbsp), and a touch of wasabi. Blend until smooth and well combined. Taste the sauce and adjust seasonings if needed, adding more sweetness, tanginess, or spice according to your preference.
Step 3
Bring 1L of water to a rolling boil in a large pot. Add 10g of coarse salt. Carefully add the 90g of capellini noodles (or your chosen thin pasta) and cook according to package directions, but reduce the cooking time by about 30 seconds to 1 minute to achieve a perfect al dente texture. Be careful not to overcook, as the noodles can become mushy.
Step 4
Drain the cooked noodles immediately and rinse them under cold running water to cool them down and remove excess starch. Drain thoroughly. Place the cooled noodles in a serving bowl. Arrange the thinly sliced cabbage and shredded perilla leaves attractively on top of the noodles. Generously spoon the prepared Tomato Bibim Sauce over everything. Finally, place the halved hard-boiled egg as a garnish. To serve, mix all the ingredients together well with chopsticks and enjoy your delicious and refreshing Tomato Bibim Guksu!
