Main Ingredients

- 1 king oyster mushroom
- 1 sheet of fish cake
- 1 packet of ramen garnish (the dried vegetable mix usually included in the ramen package)
Spicy and Sweet Bibim Sauce
- 1/3 cup chopped green onions
- 1 Tbsp cooking oil
- 1 Tbsp sesame oil
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1 packet of ramen soup base (powder)
- 1/2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sugar
- 1/5 Tbsp sesame seeds (or to taste)
- 1/3 cup chopped green onions
- 1 Tbsp cooking oil
- 1 Tbsp sesame oil
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1 packet of ramen soup base (powder)
- 1/2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sugar
- 1/5 Tbsp sesame seeds (or to taste)
Cooking Instructions
Step 1
First, wash the king oyster mushroom thoroughly, cut it in half lengthwise, and then slice it thinly on the diagonal about 0.5cm thick. Cut the fish cake into strips of similar thickness, about 0.5cm apart. Preparing the ingredients like this will help speed up your cooking time.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Once the water is boiling, add the ramen noodles, king oyster mushroom, fish cake, and the dried garnish packet from the ramen. Stir gently about 6-7 times as it boils to ensure the noodles cook evenly and the ingredients meld together. You can adjust the noodle cooking time according to your preference.
Step 3
When the noodles are cooked, separate the cooked mushrooms and fish cake from the noodles and set them aside. This step helps to maintain the chewy texture of the noodles.
Step 4
Drain the noodles using a colander and quickly rinse them under cold running water to cool them down. Next, prepare a bowl of ice water and submerge the noodles in it. Gently knead the noodles with your hands several times to make them even firmer and chewier. Finally, drain them thoroughly to remove excess water. Your noodles are now ready.
Step 5
Now, let’s make the delicious bibim sauce! Heat a non-stick pan over medium heat and add the cooking oil and sesame oil. Add the chopped green onions and stir-fry them slowly until they turn golden brown and their fragrance infuses the oil. Be careful not to burn the green onions.
Step 6
Once the green onions are well-cooked and have released their aromatic oil, add the gochugaru (Korean chili flakes) to this infused oil and stir. This simple step creates a fragrant chili oil right in your kitchen, adding a wonderful spicy flavor.
Step 7
To the chili oil, add the ramen soup base (powder), gochujang (Korean chili paste), and sugar. Stir everything together until well combined to create a perfectly balanced bibim sauce. This sauce will be a delightful mix of spicy, sweet, and savory. Taste and adjust the sugar or gochujang if needed to suit your preference.
Step 8
Finally, place the prepared chewy noodles onto a plate. Generously spoon the bibim sauce over the noodles, add the reserved mushrooms and fish cake, and sprinkle with fragrant sesame seeds. Gently mix everything together by hand until well combined, and voilà! Your special bibim ramen is ready in just 15 minutes. Enjoy your delicious meal!
