Commercial jellies often contain added sugar, caramel syrup, textrin, and artificial coloring. Plus, imported keto jellies can be quite expensive! This recipe offers a healthier, budget-friendly alternative using simple gelatin powder. Create your own wholesome keto jelly at home with pure ingredients and the delightful taste of strawberries.
Ingredients- 75g Strawberry or Blueberry Juice (approx. 150g fresh strawberries)
- 5g Allulose (adjust to taste)
- 15g Gelatin Powder
Cooking Instructions
Step 1
Prepare approximately 150g of fresh strawberries. Wash them thoroughly and remove the green tops (stems).
Step 2
Place the hulled strawberries into a food processor or blender. Blend until completely smooth and pureed, ensuring there are no large chunks.
Step 3
Strain the strawberry puree through a fine-mesh sieve. Gently press with a spatula to extract as much clear juice as possible, discarding any solids.
Step 4
Measure exactly 75g of the strained strawberry juice. If you have less, you can add a tiny bit of water; if you have more, you might need to press a bit more puree.
Step 5
In a saucepan over medium-low heat, combine the 75g of strawberry juice, 15g of gelatin powder, and 5g of allulose. Whisk continuously until the gelatin powder is fully dissolved and the mixture is smooth.
Step 6
Begin heating over medium heat, stirring constantly to melt the ingredients. As soon as it starts to simmer or boil, immediately reduce the heat to low.
Step 7
Continue to gently cook over low heat for 5 minutes, stirring constantly with a spatula. Use a swirling motion (like a ‘C’ or ‘O’) to ensure even heating and prevent sticking or clumping. This step helps the gelatin fully bloom and integrate.
Step 8
Remove the saucepan from the heat. Carefully pour the warm jelly mixture into a piping bag or a zip-top bag with a corner snipped off. This will make pouring into molds easier and cleaner.
Step 9
Pour the jelly mixture into your desired silicone molds or small containers. Be careful not to overfill. Gently tap the molds to release any air bubbles for a smooth finish. Place the filled molds in the refrigerator and chill for at least 30 minutes, or until firm and set. Enjoy your homemade, wobbly jelly!
