Main Ingredients- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 30 cooked cocktail shrimp (peeled and deveined)
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/2 medium onion
- 4 large eggs
- 1 bunch garlic chives (or other green vegetables of choice)
- 15 sheets rice paper
- Chili sauce or peanut sauce for dipping
Cooking Instructions
Step 1
First, thoroughly wash the bell peppers (red, orange, and yellow, one of each), remove the seeds, and julienne them into thin strips. To make them look beautiful when rolled, cut them to about half the diameter of the rice paper.
Step 2
Heat 1 tablespoon of olive oil in a pan. Lightly season the cooked cocktail shrimp (about 30 large-sized ones) with 1/2 teaspoon of salt and sauté until lightly golden. This enhances their natural sweetness and adds a wonderful flavor.
Step 3
Peel the onion, julienne it thinly, and soak it in cold water for a few minutes to remove any sharp taste. Drain it well. The amount of onion should be similar to the bell peppers; use about half of a large onion or one small onion.
Step 4
Prepare the egg crepes for the filling. You can separate the yolks and whites, cook them into thin omelets separately, and then julienne them, or whisk them all together and cook like a thin pancake. Rolling the cooked egg crepe before slicing makes for a neater presentation.
Step 5
Include some green vegetables to add vibrant color to your summer rolls. I’ve used garlic chives for their pleasant aroma, but feel free to use perilla leaves, lettuce, or even bell peppers. Fresh greens will enhance the overall freshness of the rolls.
Step 6
Boil plenty of water in a kettle for softening the rice paper. Pour the hot water into a wide, shallow dish. Dip one sheet of rice paper into the hot water for just about 3 seconds, then immediately remove it. Be careful not to over-soak, as the rice paper can tear. Replenish or replace the hot water as it cools down to maintain the right temperature.
Step 7
Place your desired amount of prepared julienned vegetables (bell peppers, onion, egg crepe, garlic chives, etc.) onto the softened rice paper. Arrange 1-2 cooked cocktail shrimp on top. Placing shrimp on both sides ensures each half of the cut roll will have a shrimp, making it look more appealing.
Step 8
Fold in the sides of the rice paper first to enclose the filling. Then, roll it up tightly from the bottom, like wrapping a gift, to prevent the ingredients from spilling out. Once rolled, cut each summer roll in half diagonally for a beautiful presentation.
Step 9
Serve the prepared summer rolls with chili sauce or a rich peanut sauce for dipping. For an extra burst of flavor, you can spoon a little sauce inside each roll before serving. Enjoy a delightful and refreshing meal with this colorful combination of fresh ingredients and delicious sauces!
