Tender, juicy, chewy, and packed with umami – shrimp are a universally loved ingredient! I recently discovered fresh, domestic red shrimp at a Korean market and decided to make the simplest yet most delicious shrimp dish: Red Shrimp Butter Roast. The plump texture, comparable to lobster, and the rich, savory juices are absolutely delightful. The addition of fresh lime adds a wonderful aroma, eliminating any hint of fishiness. This red shrimp butter roast is perfect as a beer accompaniment and a sophisticated dish for any occasion. Let’s make it together!

- 6 Red Shrimp
- 1 Lime
- 2 Tbsp Salted Butter
- 1/3 tsp Black Pepper

First, slice the lime into rounds about 0.5 cm thick. You can substitute lemon if needed. We’ll lightly grill half of the lime slices with the shrimp to infuse their aroma, and serve the other half fresh for a zesty finish.
Step 3
Red shrimp have somewhat rough and thick legs. It’s best to trim these sharp parts with kitchen scissors. If you’re preparing this for guests, peeling the shrimp before cooking will make them much easier to eat. Today, I’ll be cooking them with the shells on to enjoy a richer flavor.
Step 4
Preheat a pan over high heat for 3 minutes, then reduce the heat to medium. Melt 1 tablespoon of salted butter in the pan and place the red shrimp on top. We’ll use the remaining tablespoon of butter at the end to add a final aromatic touch. Since I’m using salted butter, I won’t add any extra seasoning.
Step 5
Cook one side of the shrimp for about 4 minutes until golden brown. Then, flip the shrimp and cook the other side for another 3 minutes. Red shrimp are quite large, so ensure they are cooked through sufficiently. After flipping the shrimp, add about half of the lime slices to the pan to lightly cook with them. Finally, add the remaining tablespoon of butter on top of the shrimp and let it melt, allowing the aroma to fully coat the shrimp.

Now, garnish with the remaining fresh lime slices and a sprinkle of black pepper. Your simple yet elegant Red Shrimp Butter Roast is ready!

This dish pairs wonderfully with a cold beer! The large red shrimp have a wonderfully firm and bouncy texture, almost like lobster, making each bite incredibly satisfying.
