Main Ingredients- 15-20 fresh strawberries
- Lemon (to taste)
Basic Seasoning- Sugar (equal weight to strawberries or adjusted to preference)
- Sugar (equal weight to strawberries or adjusted to preference)
Cooking Instructions
Step 1
First, thorough washing of the strawberries is important. Fill a bowl with plenty of water and add about 2 tablespoons of vinegar. Soaking the prepared strawberries in this vinegar solution for about 10 minutes helps to remove impurities and residual pesticides.
Step 2
Now, let’s sterilize the glass jar that will hold the strawberry syrup. Place the jar and cold water together in a pot and start heating from the beginning. Once the water boils, turn off the heat, remove the jar, drain it, and then invert it to let it cool. This method enhances sterilization. Ensure the jar is completely dry.
Step 3
After washing, remove excess water from the strawberries and weigh them. The strawberries I prepared weighed about 489g. Typically, strawberry syrup is made with an equal 1:1 ratio of strawberries to sugar. However, since I was making a small batch to consume quickly, I reduced the amount of sugar.
Step 4
If you are making a small quantity to be consumed within a few days, it’s okay to reduce the sugar ratio slightly. If you plan to store it for a longer period, increasing the sugar content is recommended to prevent spoilage. Adjust according to your preference.
Step 5
After thoroughly washing the strawberries, ensure they are completely dry before preparing them for syrup. Any remaining moisture can reduce the freshness of the syrup, so use paper towels to gently pat them dry.
Step 6
Now it’s time to chop the strawberries. Cut them into small, bite-sized cubes. If your knife is sharp, this step will be easy. Be careful not to mash the strawberry flesh as you cut.
Step 7
Adjust the amount of lemon according to your taste. I used about 1-2 lemons, but feel free to add more if you enjoy a tangier flavor. The lemon’s zestiness will further enrich the taste of the strawberry syrup.
Step 8
All ingredients are now prepared. Shall we start making the strawberry syrup?
Step 9
Add the sugar to the prepared strawberries. Reserve a small amount of sugar to sprinkle on top later, and add the rest to the bowl. Gently mix with a spoon, being careful not to mash the strawberries, until they are well combined with the sugar. This process allows the sugar to penetrate the strawberry pulp.
Step 10
Carefully transfer the sugar-coated strawberries into the sterilized glass jar. It’s best to leave a little space at the top of the jar, rather than filling it completely to the brim.
Step 11
Finally, sprinkle the reserved sugar evenly over the strawberries in the jar. This helps prevent the strawberry stems from direct contact with air, which aids in preservation. For a neat finish, cover the top with plastic wrap before sealing with the lid. Refrigerate and allow it to mature before enjoying.
