Stir-fried Zucchini and Oyster Mushroom: Super Simple Side Dish for Kids
Kid-Friendly Stir-fried Zucchini and Oyster Mushroom!
Make a super simple side dish with zucchini and oyster mushrooms~ Great for kids’ meals and low-sodium diets!
Ingredients- 1 medium zucchini
- 100g oyster mushrooms
- 1/2 medium onion
- 1 red chili pepper (optional, for color)
Seasoning- 1 Tbsp olive oil
- 1 Tbsp minced garlic
- 1/2 Tbsp salt (adjust to taste)
- 1 Tbsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
First, prepare one medium zucchini. Wash it thoroughly under running water and pat it dry.
Step 2
Julienne the zucchini into strips that are not too thin, about 0.5 cm thick. Be careful, as cutting them too thin might cause them to break apart during stir-frying.
Step 3
Sprinkle 1/2 Tbsp of salt evenly over the julienned zucchini and let it sit for 5 minutes to lightly salt. This process draws out excess moisture, preventing the dish from becoming watery and helping to maintain a crisp texture.
Step 4
Julienne the half onion to a similar size as the zucchini. Remove the seeds from the red chili pepper and thinly julienne it for color (you can omit this if you’re avoiding spice for your child). Trim the tough ends of the oyster mushrooms and gently tear them into bite-sized pieces.
Step 5
Heat 1 Tbsp of olive oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and stir-fry for just 1-2 seconds until fragrant. Be careful not to burn the garlic.
Step 6
Once the garlic is fragrant, add the prepared zucchini, oyster mushrooms, and onion to the pan. Sprinkle the remaining 1/2 Tbsp of salt over the vegetables. Stir-fry quickly over high heat until the onion becomes translucent, about 1-2 minutes. Avoid overcooking, as the zucchini can become mushy.
Step 7
When the onion starts to turn translucent, add the julienned red chili pepper and stir-fry for another 30 seconds. Turn off the heat, then drizzle in 1 Tbsp of sesame oil and a pinch of sesame seeds. Stir well to combine and finish. Immediately transfer the stir-fried mixture to a serving dish to prevent further cooking from residual heat and maintain its fresh taste.

And there you have it – a delicious stir-fried zucchini and oyster mushroom dish, perfect as a healthy and simple side for your child’s meal! It’s also a wonderful accompaniment to rice or a light meal on its own.
