Ingredients

  • 30g sliced garlic: For a fragrant garlic base.

  • 30g green onion: For aromatic flavor.
  • 20g cooking oil: For stir-frying.
  • Pinch of salt: To season.
  • Pinch of black pepper: To enhance flavor.

Cooking Instructions

Step 1

Begin by thinly slicing the garlic into slivers. Slice the green onion diagonally to release its aromatic oils.

Step 2

Wash the bok choy thoroughly. Cut it into lengths of about 3-4 cm and then halve them lengthwise. This helps the sauce penetrate better and makes it easier to eat.

Step 3

Thinly slice the onion into strips. Cut the green bell pepper into strips of similar thickness to the onion for a cohesive look and texture.

Step 4

Heat the cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté until fragrant and lightly golden. Be careful not to burn the garlic. Then, add the sliced onion and green bell pepper and stir-fry until they begin to soften slightly. You want them tender but still with a slight bite.

Step 5

Once the vegetables have softened a bit, add the thinly sliced pork belly to the pan. Spread the pork out and stir-fry until it’s about halfway cooked. Season with a pinch of salt and pepper to enhance the flavor and remove any porky smell.

When the pork belly is starting to brown, pour in the Haochi Mala Sauce (90g). You can adjust the amount of sauce based on how spicy you like it.

Continue to stir-fry everything together until the pork belly is fully cooked and coated in the delicious mala sauce. Now, add the tofu noodles to the pan. Gently toss them with the sauce and ingredients, stir-frying for about 1-2 minutes until the noodles are heated through and have absorbed some of the sauce. Be careful not to overcook the tofu noodles, as they can become mushy.

Step 8

Finally, add the prepared bok choy to the pan. Stir-fry over high heat for just about 30 seconds to a minute, until the bok choy is bright green and still crisp. You want to retain its fresh crunch.

Step 9

Transfer the stir-fried pork belly and tofu noodles to a serving dish. Garnish with a sprinkle of toasted sesame seeds for an extra touch of flavor and visual appeal. Enjoy your homemade mala stir-fry!
