Transform your leftover boiled taro stems and bracken into a simple yet deeply flavorful seasoned vegetable dish. This ‘namul bokkeum’ offers a delightful chewy texture and savory taste, making it a perfect healthy side dish.

Main Ingredients

  • 150g boiled taro stems, squeezed dry
  • 100g boiled bracken, cut to bite-size
  • 1/2 green onion, finely chopped

Seasoning

  • 2-3 Tbsp soup soy sauce (adjust to taste)
  • 1 tsp minced garlic
  • 1.5 Tbsp sunflower oil (or cooking oil)
  • 1 tsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, thoroughly squeeze out the water from the boiled taro stems. Then, cut them into bite-sized pieces. Removing any tough parts and using only the tender portions will enhance the flavor and texture.

Cut the boiled bracken to a similar length as the taro stems. If the bracken is very mushy, it might not have a pleasant texture when stir-fried. It’s best to use firmer pieces or blanch them lightly beforehand. (Optional: Blanching in rice water can help remove any unwanted odor.)

Finely chop the green onion. You can use both the white and green parts to add more flavor. Finely chopped green onions will contribute a fragrant aroma, making the dish even more delicious.

In a bowl, combine the cut taro stems and bracken. Add the chopped green onion, minced garlic, soup soy sauce, and toasted sesame seeds. Gently mix with your hands, ensuring the seasoning is evenly distributed throughout the vegetables. You can use regular soy sauce, but soup soy sauce helps preserve the natural savory taste of the namul.

Heat 1.5 Tbsp of sunflower oil in a pan over medium heat. Add the seasoned taro stems and bracken mixture. Stir-fry for about 5 minutes until the vegetables are tender and the seasonings are well combined. Be careful not to burn them. Just before turning off the heat, drizzle in 1 tsp of sesame oil for an extra layer of fragrance. Stir well to finish. Your delicious stir-fried taro stems and bracken are ready!
