Wondering what side dish to make? We decided to whip up our favorite stir-fried potatoes, adding some imitation crab meat that was leftover from the day before, creating a perfect side dish for the week. This recipe offers a wonderful balance of tender potatoes and savory imitation crab.
Main Ingredients
- 2 Potatoes (approx. 245g after preparation)
- 2 Imitation Crab Sticks (approx. 70g)
- 1.3 Tbsp Scallions (finely chopped)
- 0.3 Tbsp Minced Garlic
- 2.5 Tbsp Olive Oil
- 3 Tbsp Water
- 0.7 Tsp Salt
- 2 Pinches Black Pepper
- A sprinkle of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, peel the potatoes and wash them under running water. Then, slice them into about 3mm thick pieces. It’s best to cut them into uniform thickness so they cook evenly. Next, cut the sliced potatoes into thin shreds of the same thickness. If using imitation crab sticks, wear disposable gloves and shred them into bite-sized pieces along their natural grain.
Step 2
Finely chop the scallions to add freshness, and prepare the minced garlic.
Step 3
Heat a frying pan and add the prepared shredded potatoes along with 2.5 tablespoons of olive oil.
Step 4
Turn the heat to medium and stir-fry the potatoes for about 1-2 minutes, ensuring they are well coated with oil. This step helps prevent the potatoes from sticking to the pan.
Step 5
To season the stir-fry, add 0.7 teaspoon of salt. It’s advisable to start with a smaller amount of salt and add more later to taste, as it’s easy to make it too salty.
Step 6
Pour in 3 tablespoons of water and gently toss the potatoes. Be careful not to add too much water, as this can make the potatoes steam rather than stir-fry. Just enough water is needed to help the potatoes cook until tender.
Step 7
Cover the pan with a lid, reduce the heat to medium-low, and cook for about 3 minutes until the potatoes are tender. During this time, you can lift the lid once or twice to stir the potatoes gently, which prevents them from burning or sticking to the bottom.
Step 8
After 3 minutes, remove the lid and check if the potatoes are tender by piercing them with a chopstick or fork. If they are still firm, cook for a little longer. Taste the potatoes and if they need more seasoning, add another pinch or two of salt to achieve the desired flavor.
Step 9
Now, add the shredded imitation crab to the pan and stir-fry it together with the potatoes. Imitation crab can become mushy if overcooked, so add it towards the end and stir-fry briefly.
Step 10
Finally, add the chopped scallions and minced garlic. Stir everything together until well combined, then turn off the heat.
Step 11
Sprinkle in 2 pinches of black pepper to enhance the flavor of the stir-fried potatoes.
