Main Ingredients

  • 1 fresh broccoli head
  • 3 shiitake mushrooms
  • 1/2 onion
  • 1/2 stalk of green onion
  • 1 Cheongyang chili pepper (or hot pepper)
  • 1 red chili pepper
  • 3 Tbsp cooking oil
  • 1 Tbsp sesame seeds
  • 2 tsp salt (for stir-frying)

Seasoning

  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce (Guk-ganjang or regular)
  • 1 Tbsp sesame oil
  • Pinch of black pepper

Cooking Instructions

Step 1

First, it’s important to wash the broccoli thoroughly. Fill a bowl with water and add 1 tsp of salt. Submerge the broccoli in the saltwater and let it sit for about 10 minutes. This helps to effectively remove any small impurities or potential insects and sanitize the broccoli.

Next, bring a pot of water to a boil and add 1 tsp of salt. Carefully add the washed broccoli and blanch it for approximately 30 seconds. Be careful not to overcook it, as this can diminish its crisp texture and nutrients. Blanching it briefly will also help maintain its vibrant green color.

After blanching, immediately drain the broccoli using a colander. It’s best to remove as much water as possible. If there’s still excess moisture, you can gently pat it dry with a paper towel to prevent the stir-fry from becoming watery.

Prepare the shiitake mushrooms by removing the stems and slicing the caps into pieces similar in size to the broccoli florets. Slice the onion into bite-sized pieces or thin strips. Thinly slice the green onion diagonally, and likewise slice the red and Cheongyang chili peppers diagonally after removing the seeds. These chilies will add color and a touch of heat.

Heat 3 Tbsp of cooking oil in a pan over medium-low heat. Add the minced garlic and sliced green onions, and stir-fry until fragrant. The sweetness of the green onions will infuse into the oil, adding depth of flavor.

Once the green onions are fragrant, add the sliced shiitake mushrooms and continue to stir-fry. Cook until the mushrooms become slightly translucent and tender. This step enhances the savory umami flavor.

When the shiitake mushrooms are partially cooked, add the blanched broccoli to the pan. Stir and mix well to combine with the mushrooms.

As the broccoli begins to soften slightly, pour in 2 Tbsp of soy sauce evenly over the ingredients and stir-fry. Taste and adjust the seasoning with salt if needed. Ensure the sauce coats everything evenly.

Now, add the sliced onions, Cheongyang chilies, and red chilies to the pan. Stir-fry quickly until the vegetables are just tender-crisp and their colors are vibrant. Avoid overcooking to maintain their crunch.

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle with black pepper to your liking. The aromatic sesame oil and pepper will further enhance the overall flavor profile of the dish.
