Zucchini is so delicious right now, so I always buy zucchini. I used the leftover round zucchini from my mother-in-law to make a stew and then decided to make a stir-fried zucchini side dish with fermented shrimp. (Tablespoon measured by a standard rice spoon)

Stir-Fried Zucchini Ingredients

  • 215g round zucchini
  • 29g carrot
  • 29g onion
  • 15g green onion
  • 0.5 Tbsp minced garlic
  • 2.5 Tbsp grapeseed oil
  • 1 Tbsp fermented shrimp (saeujeot)
  • 1-2 pinches salt (to taste)
  • Sesame seeds for garnish

Cooking Instructions

Slice the round zucchini into approximately 5-6mm thick rounds, then cut these rounds into julienne strips of the same thickness. It’s best to cut them slightly thicker so they don’t fall apart during stir-frying.

Julienne the onion and carrot into strips about 3mm thick, which is thinner than the zucchini strips.

Prepare 0.5 tablespoon of minced garlic and finely chop the green onion.

Heat 2.5 tablespoons of grapeseed oil in a stir-fry pan over medium heat. Add the minced garlic and chopped green onion, and stir-fry until fragrant to create a flavorful scallion-garlic oil. Be careful not to burn them.

Once the aromatic oil is ready, add the julienned round zucchini, carrot, and onion to the pan. Stir-fry for about 1 minute, gently tossing the vegetables to combine.

Add 1 tablespoon of fermented shrimp (saeujeot) and continue to stir-fry, ensuring the seasoning is evenly distributed among the vegetables.

Continue stir-frying until the zucchini becomes slightly translucent and the volume reduces, but still retains a slight crispness (‘salkang’). Avoid overcooking, as the zucchini can become mushy.

Taste the stir-fry and season with 1-2 pinches of salt if needed. Since fermented shrimp is quite salty, it’s best to add salt gradually. If you prefer a milder flavor, you can omit the salt altogether.

Once the seasoning is adjusted and the zucchini is cooked to your liking, turn off the heat. Sprinkle generously with sesame seeds for a beautiful finish and enhanced flavor. Your delicious stir-fried round zucchini with fermented shrimp, a wonderful side dish, is now complete! Enjoy your meal.
