Stir-fried Pork Belly and Spinach: A Sweet & Savory Delight for Kids

A quick and delicious stir-fry featuring fresh, seasonal spinach (like island spinach or field spinach) and flavorful pork belly. This dish offers a delightful sweet and savory balance that will quickly become a family favorite, perfect for lunchboxes or as a quick weeknight meal.

Main Ingredients

  • Pork Belly (thinly sliced, ‘Dae-pae’ style) 500g
  • Spinach 200g (cleaned and trimmed)

Seasoning & Aromatics

  • Minced Garlic 1 tsp
  • Black Pepper a pinch
  • Pork Rib Marinade 3-4 Tbsp (or a mix of soy sauce, sugar, and oyster sauce)
  • Sesame Oil a drizzle
  • Toasted Sesame Seeds a sprinkle

Cooking Instructions

Step 1

Prepare the fresh spinach. If using island spinach or field spinach, carefully remove any yellowed or wilted leaves. Tear the spinach into bite-sized pieces. Wash thoroughly in cold running water 2-3 times, shaking off excess water.

Heat a pan over medium-high heat and add the thinly sliced pork belly. Cook until it becomes golden brown and slightly crispy. The rendered fat will help to coat the pan.

As the pork belly is nearing doneness, add the minced garlic and a pinch of black pepper. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

Once the pork belly is almost cooked through, add the prepared spinach to the pan along with the pork rib marinade (or your chosen soy sauce, sugar, and oyster sauce mixture). Increase the heat to high and stir-fry vigorously for about 5 minutes, or until the spinach wilts and is cooked through. Mix well to ensure everything is evenly coated.

Finish the dish by drizzling with sesame oil and sprinkling with toasted sesame seeds. This sweet and savory stir-fry is incredibly appealing, even to children!
