  • 300g thinly sliced pork belly (daepae samgyeopsal)
  • 150g fresh bean sprouts
  • 1 bunch chives
  • 1-2 Korean green chilies (adjust to your spice preference)
  • 1 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

First, gently rinse the fresh bean sprouts under running water and drain them thoroughly. Trim any roots or yellowed leaves. Cut the chives and Korean green chilies into bite-sized pieces, about 3-4 cm long. If you prefer less spice, you can remove the seeds from the chilies.

Heat a frying pan over medium heat. Add the thinly sliced pork belly and stir-fry until it’s golden brown and has rendered some of its fat. Add the minced garlic and cook for another minute until fragrant, infusing the oil with garlic aroma. Then, add the prepared bean sprouts and stir-fry quickly until they just begin to soften and wilt. Be careful not to overcook them, as they will lose their crispness.

Pour the oyster sauce (2 tablespoons) around the edges of the pan. Stir everything together to ensure the sauce coats the pork belly and bean sprouts evenly. Add the chopped chives and green chilies, and stir-fry for about 1 more minute to retain their fresh texture and aroma. Season with a pinch of black pepper.
