Ingredients- 2 handfuls of perilla shoots (generously packed)
- 2 Tbsp sesame oil
- 1/2 handful of dried anchovies for stir-frying
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 5 Tbsp water
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Gently blanch the perilla shoots in boiling water for just 30 seconds. Be careful not to overcook them, as they can become mushy. A quick blanch preserves their vibrant color and fresh texture.
Step 2
Immediately after blanching, rinse the perilla shoots under cold running water to stop the cooking process and cool them down. Squeeze out any excess water thoroughly. This step is crucial to prevent the dish from becoming watery and to ensure the seasonings penetrate well.

Heat a pan over medium heat and add the sesame oil. Once the oil is warm, add the squeezed perilla shoots and stir-fry for about 1 minute. You’ll start to notice their aromatic fragrance releasing.
