Oyster mushrooms are affordable yet packed with nutrients, making them a frequent guest on our dinner tables! Today, I’ll share a detailed recipe for stir-fried oyster mushrooms that perfectly balances their chewy texture with the crispness of vegetables and the spicy kick of chili peppers. Make this simple yet delicious rice-thief side dish right away!
Mushroom & Vegetable Ingredients- 2 bunches Oyster mushrooms (approx. 200g)
- 60g Carrot (approx. 1/3 medium)
- 1/2 Onion (approx. 70g)
- 4 Korean green chili peppers (approx. 30g)
Flavor-Enhancing Seasonings- 1 Tbsp Cooking oil
- 1 Tbsp Minced garlic
- 1 Tbsp Vegetarian sauce (or oyster sauce)
- 1/2 tsp Salt (adjust to taste)
- 1 Tbsp Sesame oil
- 1/2 Tbsp Toasted sesame seeds
- 1 Tbsp Cooking oil

Cooking Instructions
Step 1
Prepare 2 bunches of fresh oyster mushrooms. (Note: We used affordably purchased oyster mushrooms for this recipe.)
Step 2
Prepare the side ingredients that will add flavor to the stir-fry. Have ready 1/2 onion, 60g carrot, 4 Korean green chili peppers for a spicy touch, and 1 Tbsp minced garlic.
Step 3
Trim off just the tough base of the oyster mushrooms. Gently separate them into bite-sized clusters. We will briefly blanch them in boiling water.
Step 4
Add the prepared oyster mushrooms to vigorously boiling water and stir quickly. Blanching for just about 30 seconds will help preserve their chewy texture.
Step 5
Immediately remove the blanched oyster mushrooms and rinse them under cold running water to quickly cool them down. This stops the cooking process and helps maintain their texture.
Step 6
Drain the oyster mushrooms thoroughly in a colander after rinsing. If not properly drained, they might clump together when stir-fried, so ensure excess water is removed.

While the mushrooms drain, prepare the vegetables. Julienne the 1/2 onion into strips about 0.5cm thick.

Using a mandoline slicer or a knife, thinly julienne the carrot to about 0.3cm thickness.

Cut the 4 Korean green chili peppers in half lengthwise, scrape out the seeds, and rinse them gently. Removing the seeds will prevent excessive spiciness while retaining a pleasant heat.

Julienne the seeded and rinsed chili peppers into thin strips, about 0.3cm thick. These will add color and a nice spicy note.

All the vegetable prep is now complete! Neatly julienned vegetables will enhance the final presentation of the dish.

To begin the stir-fry, heat a frying pan over medium heat and add 1 Tbsp of cooking oil.

Add 1 Tbsp of minced garlic to the pan and sauté until fragrant. Once the garlic aroma is released, add the drained oyster mushrooms and stir-fry them together.

Once the oyster mushrooms are slightly cooked, add the julienned carrots and continue to stir-fry. Cook until the carrots become slightly translucent.

Add 1 Tbsp of vegetarian sauce (or oyster sauce) to enhance the umami flavor. Stir-fry well to ensure the sauce is evenly distributed among all ingredients. Be careful not to burn the sauce.

Add the julienned onions and stir-fry quickly over high heat. The dish becomes even tastier as the onions turn translucent.

Finally, add the julienned chili peppers and stir-fry briefly. The spicy aroma and taste of the chili peppers will elevate the overall flavor profile.

It’s time to season. Add 1/2 tsp of salt and taste, adjusting the amount as needed to suit your preference.

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil for an added nutty aroma, which will further enhance the flavor.
