Stir-fried Overripe Yeolmu Kimchi with Perilla Seeds

This summer, my batch of yeolmu (young radish) kimchi became too sour to eat as is. Rather than let it go to waste, I decided to rinse it and stir-fry it! If you also find very sour kimchi unappealing, this method of pan-frying it turns it into a delicious dish. It’s a lifesaver as even the kids enjoy it! Perhaps it reminds me of the flavors from my childhood. This recipe transforms overly sour, aged yeolmu kimchi into a nutty delight with plenty of perilla powder. Enjoy a delicious weekend!

Main Ingredients

  • 4 handfuls of overripe yeolmu kimchi
  • 8 cups of rice water
  • 1 cup of dried anchovies (for broth)

Seasoning Ingredients

  • 1 Tbsp Doenjang (Korean soybean paste) (adjust to taste)
  • 1 Tbsp Chicken Stock (optional, for enhanced flavor)
  • 2 Tbsp Perilla Oil
  • 4 Tbsp Perilla Seed Powder (adjust to taste)

Cooking Instructions

Step 1

First, thoroughly rinse the overripe yeolmu kimchi under running water several times to reduce its sourness. Be careful not to rinse too aggressively, as you don’t want to wash away all the flavor. Aim for a milder sourness.

Step 2

In a wide wok or pot, combine the rinsed yeolmu kimchi, rice water, and dried anchovies. Bring to a boil over high heat. The anchovies will add depth to the broth.

Step 3

Once the broth boils, add 1 tablespoon of doenjang and stir well to dissolve it. The doenjang will complement the kimchi’s sourness, creating a deep umami flavor.

Step 4

When the kimchi has softened and is cooked through, add the rest of the seasoning ingredients in order. Stir in 2 tablespoons of perilla oil and 4 tablespoons of perilla seed powder, stir-frying to combine everything evenly with the kimchi. (Optionally, you can add 1 tablespoon of chicken stock for extra flavor.)

Step 5

Continue to stir-fry for a little while longer until all the flavors meld together. Then, transfer the finished stir-fried overripe yeolmu kimchi with perilla seeds to a serving dish. Enjoy this delicious side dish!
