Introducing a versatile garlic scape stir-fry recipe that’s both delicious and healthy, using up those leftover vegetables and seafood from your fridge. It’s perfect as a side dish for meals or packed lunches!
Main Ingredients- 200g fresh garlic scapes
- 1/2 medium carrot
- 1/2 medium onion
- 1/2 bunch King Oyster mushrooms (or other mushrooms)
- 2 Tbsp dried shrimp (or small dried anchovies)
- 1 Tbsp brown rice oil (or other cooking oil)
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly and pat them dry. Cut them into bite-sized pieces, about 3-4 cm long. This makes them easier to stir-fry and eat.
Step 2
Rinse the cut garlic scapes one more time in cold water to remove any remaining dirt. Drain them well in a colander. Excess water can make them soggy when stir-fried.
Step 3
Peel and wash the carrot and onion. Slice them thinly into matchsticks, similar in length to the garlic scapes. You can adjust the thickness to your preference.
Step 4
Gently rinse the King Oyster mushrooms under running water. Trim off the tough ends, pat them dry, then tear them into smaller pieces or slice them to a size similar to the other ingredients. These will add a pleasant chewy texture.

Heat 1 tablespoon of brown rice oil in a pan over medium-high heat. Add the drained garlic scapes. Sprinkle a little salt over them; this helps maintain their crispness and adds a subtle seasoning. Stir-fry for 2-3 minutes until they start to soften slightly.

Once the garlic scapes are slightly tender, add the julienned carrots, onions, and mushrooms to the pan. Continue to stir-fry everything together for another 2-3 minutes until the vegetables are evenly cooked.

Now it’s time to season! In a small bowl, whisk together 3.5 tablespoons of soy sauce, 2 tablespoons of rice syrup, and 1 tablespoon of cooking wine. Pour this mixture over the vegetables in the pan and stir-fry to coat everything evenly.

Finally, add the 2 tablespoons of dried shrimp for a savory boost and stir-fry for another 1-2 minutes. If you don’t have dried shrimp, crispy fried small anchovies are a great substitute, or you can omit them entirely for a milder flavor. Ensure everything is well combined.
Step 9
Once everything is nicely stir-fried, just before turning off the heat, drizzle a little sesame oil. Sprinkle generously with sesame seeds and toasted sesame seeds for extra flavor and texture. Your delicious garlic scape stir-fry is ready!
