Stir-Fried Garlic Scapes and Potato Noodles
The Perfect Summer Side Dish: A Fantastic Collaboration of Garlic Scapes and Shredded Potatoes
This is a simple and delicious side dish made by stir-frying tender summer potatoes with garlic scapes, which are in season right now. When you buy a bunch of garlic scapes, you often have some left over that are tricky to use up. Stir-frying them with potatoes creates a surprisingly wonderful pairing, enhancing the overall texture and flavor. It’s a versatile dish that goes wonderfully with rice and is perfect for lunchboxes!
Ingredients- 2 medium potatoes
- 150g garlic scapes (about 1 bunch)
- 70g carrot (about 1/3 medium carrot)
- A little cooking oil (for stir-frying)
- 1 Tbsp soy sauce
- 1.5 Tbsp oyster sauce
- Salt (to taste)
- Sesame oil (for finishing)
- Black pepper (for finishing)
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
First, wash all the ingredients thoroughly and prepare them. Cut the potatoes, garlic scapes, and carrots into bite-sized pieces suitable for stir-frying.
Step 2
Peel the potatoes or wash them clean. Then, cut them into thick shreds, about 0.5 cm thick, to prevent them from breaking apart during cooking. Be careful not to cut them too thin.
Step 3
Trim the garlic scapes and cut them into lengths similar to the potato shreds. Remove any tough ends, and if the stalks are thick, you can halve them lengthwise to help the seasoning penetrate better. Cut the carrot into shreds of similar length and about 0.3 cm thickness, so it has a slight bite.
Step 4
Bring a pot of water to a rolling boil, adding 1 tablespoon of salt. Once boiling, add the shredded potatoes and blanch them for only about 1 minute. It’s crucial not to overcook them at this stage. Then, add the cut garlic scapes and blanch for just another 10 seconds. Drain both ingredients and rinse them under cold water to remove excess moisture. This step helps maintain the crisp texture of the garlic scapes.
Step 5
Heat a little cooking oil in a pan over medium-high heat. Add the drained shredded potatoes and stir-fry for about 3 minutes until the edges start to look slightly translucent and cooked. Next, add the prepared garlic scapes and stir-fry for another 1-2 minutes. Finally, add the shredded carrots along with the measured soy sauce (1 Tbsp) and oyster sauce (1.5 Tbsp). Stir well to coat everything evenly. As the vegetables cook, they will release some moisture, and the sauce will thicken. Taste and adjust the seasoning with salt if needed. Just before turning off the heat, sprinkle in some sesame seeds.
Step 6
Turn off the heat. Drizzle in a little sesame oil and a pinch of black pepper, utilizing the residual heat from the pan. Give everything a final quick toss with a spatula to combine all the ingredients. Your delicious Stir-Fried Garlic Scapes and Potato Noodles are now ready!
