  • 12 sheets of square fish cakes (oden)
  • 2 onions

Seasoning

  • 1.5 Tbsp soy sauce for stir-fry/braising
  • 2 Tbsp mirin (or cooking sake)
  • 1 Tbsp minced garlic
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp mirin (for cooking)
  • 1.5 Tbsp plum syrup (maesilcheong)
  • 2 Tbsp oligosaccharide
  • 1 Tbsp corn syrup (mulyeot)

Cooking Instructions

Step 1

First, lightly blanch the fish cakes in boiling water for about 30 seconds. This step helps to firm up their texture and remove any excess oil.

Drain the blanched fish cakes thoroughly in a colander. Ensuring they are well-drained will prevent the dish from becoming soggy during cooking.

Heat a generous amount of cooking oil in a pan over low heat. Add the minced garlic and stir fry until fragrant, creating a garlic-infused oil. Be careful not to burn the garlic; you want to gently extract its aroma.

Mix well to ensure the fish cakes and onions are evenly coated. Keep the heat at a medium level to prevent the sauce from burning.
