Main Ingredients- 70g dried radish greens

Cooking Instructions
Step 1
First, prepare 70g of dried radish greens. Hard dried radish greens need to be soaked in lukewarm water for at least 2 hours until softened. Once well-soaked, rinse them thoroughly several times. Then, boil them in water for about 15-20 minutes until tender. When the stems are easily mashed with your fingers, turn off the heat and let them rest in the hot water for another 30 minutes. This helps them become even more tender. Drain them from the water, rinse under cold running water to remove any bitterness or astringency, and then drain well in a colander.

Once drained, cut the radish greens into bite-sized pieces. To make them easier to cook and eat, cut them into about 3-4 cm lengths. In a bowl, combine the cut radish greens with 1 Tbsp doenjang, 1 Tbsp minced garlic, and 1 Tbsp perilla oil. Gently knead everything together with your hands to marinate and season the greens. This pre-seasoning step ensures the flavors are evenly distributed and enhances the overall taste.

Now, prepare a deep pan. Add the pre-seasoned radish greens to the pan. Then, add 2 Tbsp of shiitake mushroom blocks for added flavor. If you’re using dried shiitake mushrooms, make sure to rehydrate them first, or you can use a little shiitake mushroom powder. Pour in 1/2 cup (approx. 100ml) of anchovy and kelp broth and bring it to a boil over medium-high heat. Cover the pan, reduce the heat to medium-low, and let it simmer for about 5-7 minutes, allowing the greens to absorb the broth.
Step 4
As the radish greens simmer and the broth reduces, it’s time to add the star ingredient for richness: 3 Tbsp of perilla seed powder. Stir well to combine everything evenly. Avoid overcooking after adding the perilla powder. Finally, add 1 red chili pepper, thinly sliced diagonally, for a touch of color and give it a final stir to finish. You can substitute red bell pepper if you prefer.
