Ingredients
- 3 large eggs
- 30g fresh chives
- 1/2 Tbsp perilla oil (or sesame oil)
- 1/2 Tbsp toasted sesame seeds
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
First, thoroughly wash a handful of fresh chives (about 30g) and chop them into approximately 1cm lengths for easy eating. Maintaining the chives’ crispness is key.
Step 2
Crack the 3 eggs into a bowl. Using a fork or whisk, gently beat the eggs until the yolks and whites are well combined. You can add a pinch of salt or pepper if desired.
Step 3
Heat 3 tablespoons of cooking oil in a pan over medium-high heat until it’s slightly shimmering. Pour the beaten eggs into the hot pan and quickly stir and scramble them, much like making scrambled eggs. Be careful not to overcook the eggs until they become hard; this is the crucial point. You’ll know the eggs are cooking well when you see small bubbles forming as they hit the pan.
Step 4
When the eggs are about 70-80% cooked, add the chopped chives and stir briefly to combine them with the eggs. It’s best to stir-fry quickly to keep the chives’ fresh aroma intact.
Step 5
Next, add 1 tablespoon of oyster sauce and stir everything together quickly one more time. Oyster sauce adds a wonderful umami flavor, making the dish even more delicious. Continue to stir-fry only until the ingredients are just combined, ensuring the eggs don’t overcook.
Step 6
Turn off the heat. Finish by drizzling 1/2 tablespoon of perilla oil (or sesame oil) over the pan for an aromatic touch. I personally find perilla oil’s nutty fragrance complements this dish beautifully. Sprinkle with 1/2 tablespoon of toasted sesame seeds. This dish is ready to be served! It makes a fantastic meal when placed over a bowl of warm rice.
