  • 2 fresh eggs
  • 21g fresh chives
  • A pinch of fine salt (adjust to taste)
  • 1 Tbsp fragrant sesame oil
  • Cooking oil (generous amount)
  • A sprinkle of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

Preparing all your ingredients before you start cooking will make the process much smoother.

Step 2

First, wash the chives thoroughly under running water to remove any dirt or debris. For extra peace of mind, you can soak them briefly in water with a few drops of vinegar to help sanitize them. Pay special attention to the root ends, as they can often hold dirt. Chop the clean chives into bite-sized pieces, about 0.5 to 1 cm in length. Now, get ready to whisk the eggs for scrambling.

Step 3

Crack the 2 eggs into a bowl and whisk them well. Add all the chopped chives to the whisked eggs. Season with salt to your preference. (I’ve tried making this with oyster sauce before, but just salt brings out the natural flavors of the chives and eggs beautifully!) At this point, your delicious chive and egg mixture is almost ready to be cooked.

Step 4

Heat a pan over medium heat and add a generous amount of cooking oil. Pour the chive and egg mixture into the hot pan.

Step 5

As the eggs begin to set, use chopsticks or a spoon to quickly stir and break them up into fluffy scrambled pieces. I found a wooden spoon to be convenient as it helped scramble the eggs without breaking them too much. Continue to stir-fry until the chives are wilted and the eggs are cooked to your liking.

Step 6

Finally, just before turning off the heat, drizzle in 1 tablespoon of fragrant sesame oil to enhance the aroma and flavor. Your delicious stir-fried chives and eggs are now complete!
