  • 1 Tbsp toasted sesame seeds
  • 1 handful chopped green onions
  • 1 handful chopped red bell pepper
  • 2 tsp perilla oil (deulgireum)

First, we’ll begin the initial step to remove the bitterness from the bellflower roots. Rinse the prepared roots thoroughly under running water. Then, place the bellflower roots in a large bowl, cover them with plenty of water, and soak for at least 1 hour to leach out the bitterness. If you have more time, soaking for 2-3 hours will yield even better results.

This is the second step for bitterness removal. Gently squeeze out excess water from the soaked bellflower roots. Place them back in the bowl, add 1 tsp of salt and 1 tsp of sugar, and gently massage and knead them with your hands. You’ll notice a slightly cloudy liquid emerging as the bitterness is drawn out. Rinse the roots again under cold water, then briefly blanch them in boiling water for about 1 minute until slightly tender.

Now, let’s move on to stir-frying. Heat a non-stick pan over medium heat and add 2 tsp of perilla oil (deulgireum). Add the blanched bellflower roots and stir-fry gently over low heat. Since they’ve been blanched, they don’t need to be cooked for a long time. Once the bellflower roots start to soften slightly, add the thinly sliced red bell pepper and the chopped green onions. Stir-fry everything together. You can also add a little minced garlic if you like. Finally, sprinkle generously with toasted sesame seeds. Adjust the seasoning with 1/2 tsp salt and 1/2 tsp sugar to your taste.
