  • 1 Tbsp sugar for brining
  • 1 Tbsp salt for brining

Seasoning Ingredients

  • 1 Tbsp minced green onion
  • 1 Tbsp sunflower oil
  • Pinch of salt
  • 1/2 Tbsp sesame oil
  • Pinch of sesame seeds

Cooking Instructions

Evenly sprinkle 1 tablespoon of sugar over the prepared bellflower root and mix well. Let it sit for 5 minutes to remove any bitterness.

After brining with sugar for 5 minutes, evenly sprinkle 1/2 tablespoon of salt over the bellflower root and mix. Brine for an additional 5 minutes. *Important: Brining with sugar first, then with salt, is crucial for effectively removing bitterness and astringency. Do not reverse the order.

After a total of 10 minutes of brining, you’ll notice that water has been drawn out, making the bellflower root moist.

Place the bellflower root in a colander and quickly rinse under cold running water. Gently pat dry to remove excess moisture. *Caution: Rinsing for too long can wash away the nutritious benefits and delicious flavor of the bellflower root, so be mindful.
