  • 150g Small Korean Anchovies (Jiri Myeolchi)
  • 50g Sliced Almonds

In a small pan or pot, combine the brown sugar (2 Tbsp), oligosaccharide (2 Tbsp), plum extract (1 Tbsp), soy sauce (1 tsp), and cooking sake (1 Tbsp). Stir well over medium-low heat. Once the mixture starts to bubble, let it simmer for a moment until it comes to a gentle boil. This helps the sugar dissolve and the flavors meld together.

Add the small Korean anchovies (150g) and sliced almonds (50g) to the simmering sauce. Stir-fry quickly for about 1-2 minutes, ensuring the anchovies don’t burn by managing the heat. Finally, drizzle in the cooking oil (3 Tbsp) and toss everything together until glossy.
