Got some Korean anchovies (jiri myeolchi) in your freezer? It’s time to bring them out! Here’s a recipe for crispy and delicious stir-fried anchovies that both kids and adults will love. We’re adding savory almonds to boost nutrition and texture! This anchovy stir-fry is incredibly addictive and perfect for a quick side dish that can last for several days. Let’s get started!
Main Ingredients- 150g Small Korean Anchovies (Jiri Myeolchi)
- 50g Sliced Almonds
Cooking Instructions
Step 1
In a small pan or pot, combine the brown sugar (2 Tbsp), oligosaccharide (2 Tbsp), plum extract (1 Tbsp), soy sauce (1 tsp), and cooking sake (1 Tbsp). Stir well over medium-low heat. Once the mixture starts to bubble, let it simmer for a moment until it comes to a gentle boil. This helps the sugar dissolve and the flavors meld together.
Step 2
Add the small Korean anchovies (150g) and sliced almonds (50g) to the simmering sauce. Stir-fry quickly for about 1-2 minutes, ensuring the anchovies don’t burn by managing the heat. Stir-fry until everything is well combined. Add the almonds towards the end and stir-fry lightly to keep them crispy. Finally, drizzle in the cooking oil (3 Tbsp) and toss everything together until glossy.
Step 3
This finished stir-fried anchovy and almond dish is a fantastic accompaniment to rice. The small anchovies are easy for children to eat, and the almonds add a delightful nutty flavor that makes it even more delicious. It’s a staple side dish loved by everyone, young and old, so be sure to give it a try!
