Main Ingredients

  • 100g dried anchovies (for soup stock, guts removed)
  • 15g sliced almonds
  • 1/2 red chili pepper
  • 1 stalk green onion
  • 1 clove garlic (minced, or 1/2 tsp minced garlic)

Seasoning

  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1 tsp corn syrup
  • 1/2 tsp mayonnaise
  • 1 tsp sesame oil
  • Pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, to remove any bitterness or fishy smell from the anchovies, place them in a dry pan over low heat and stir-fry for 1-2 minutes to remove moisture. Once the anchovies become crispy, turn off the heat and transfer them to a plate. Letting them cool slightly will enhance their crispiness.

Step 2

In a small pot or pan, combine 1 tsp soy sauce, 1 tsp sugar, and 1 tsp corn syrup. Add 3 tbsp of water and bring to a simmer. Stir occasionally as it cooks, allowing the ingredients to dissolve and the sauce to thicken slightly, creating a delicious base. Be careful not to let the sauce reduce too much.

Step 3

While the sauce is simmering, prepare the other ingredients. Remove the seeds from the red chili pepper and thinly julienne it. Slice the garlic thinly or mince it. Wash the green onion and cut it into diagonal pieces about 2cm long. These will add color and freshness.

Step 4

Once the sauce is simmering, add the pre-fried anchovies and sliced almonds to the pan. Stir-fry quickly to ensure the sauce coats everything evenly. Continue to cook until the sauce is slightly reduced and clinging to the anchovies and almonds. Keep the heat moderate to prevent burning.

Step 5

Transfer the stir-fried anchovies and almonds to a serving plate. Sprinkle with toasted sesame seeds for an extra nutty flavor and appealing look. Your delicious Almond Anchovy Stir-fry is now ready to be enjoyed with a warm bowl of rice!
