Even a simple bowl of ramyun served with a side of kkakdugi (radish kimchi) can look quite impressive and satisfying! Shin Ramyun, in particular, makes for a wonderfully hearty meal. Today, we’ll be following the official Shin Ramyun recipe precisely. While I usually prefer a more ‘balanced’ approach in my cooking, I’ve found that for ramyun, sticking to the manufacturer’s instructions yields the absolute best results! This recipe will guide you to create a rich and spicy Shin Ramyun at home that rivals any restaurant.

  • 1 packet Shin Ramyun
  • 550ml water (approx. 3 cups)

Cooking Instructions

First, pour 550ml of water (about 3 standard measuring cups) into a pot and bring it to a boil over high heat. Once the water is rapidly boiling, add the Shin Ramyun noodles, powder soup base, and the dried vegetable flakes (playk) all at once. Adding the ingredients together at this stage helps the soup base dissolve evenly, creating a deeper broth flavor.

It’s best to try and match the water amount to the 550ml specified on the Shin Ramyun package as closely as possible. If your pot has measurement markings, it will make this step even easier. The precise amount of water significantly impacts the broth’s consistency and taste, so following the recipe is highly recommended.

Prepare the soup base and dried vegetable flakes, which are key to Shin Ramyun’s rich flavor. Once the water is boiling vigorously, add the prepared powder soup and vegetable flakes to the pot and let them simmer together. This simmering process allows the savory flavors of the soup base to fully infuse into the broth.

When the water returns to a rolling boil, it’s time to add the noodles. After adding the noodles, immediately maintain high heat and begin cooking. For chewier noodles, you can gently lift the noodles with chopsticks and lower them back down a few times as they cook. This action introduces air, helping to create a more resilient and springy texture.

When the ramyun is almost cooked (about 30 seconds to 1 minute before the total cooking time of 4 minutes and 30 seconds), add some chopped green onions on top. The fresh aroma and taste of the green onions will further enhance the ramyun’s overall flavor profile. Let it simmer for just a little longer after adding the green onions, and your delicious Shin Ramyun will be ready!
