Cooking Instructions
Step 1
Start by preparing 150g of Ggwari peppers. Using fresh peppers will ensure the best texture and flavor.
Step 2
Gently remove the stems from the Ggwari peppers. Removing the stems makes them easier to eat and helps the seasoning penetrate better.
Step 3
Rinse the peppers gently in clean water, then rinse again under running water. Drain them thoroughly in a colander. It’s crucial to remove excess water, as it can cause the flour to clump.
Step 4
Place the drained Ggwari peppers and 3 tablespoons of flour into a clean plastic bag. Seal the bag and gently shake it to coat each pepper evenly with flour.
Step 5
Check to ensure the flour is lightly and evenly coated on all the peppers. This flour coating will make the peppers more tender after steaming and help them absorb the sauce better.
Step 6
Fill a steamer pot with water and bring it to a boil. Once steam is actively rising, add the floured peppers to the steamer, cover, and steam for about 5 minutes. Be careful not to over-steam, as they can become mushy.
Step 7
While the peppers are steaming, finely chop the white part of the green onion. The white part adds a fragrant aroma to the dish.
Step 8
In a large bowl, combine the steamed Ggwari peppers, chopped green onion, and all the seasoning ingredients (3 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1/2 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds). Gently mix everything together with a spatula or chopsticks, being careful not to mash the peppers, until the seasoning is evenly distributed.
Step 9
For the best flavor as a side dish, it’s recommended to make the seasoning slightly richer and saltier. Feel free to adjust the seasoning to your preference.
Step 10
Your mouthwatering Ggwari Gochu Jjim, the perfect summer side dish, is now ready! The combination of its crisp yet tender texture with the savory, sweet, and slightly spicy seasoning is truly wonderful. It’s a magical dish that will boost your appetite, even when you don’t feel like eating. Be sure to give it a try!
