Spicy Cheongyang Pepper Sauce

  • 1 pack Cheongyang chili peppers (approx. 10-15 peppers, seeds removed and minced)
  • 5 red chili peppers (seeds removed and minced)
  • 1 onion (small size, finely minced)
  • 3 Tbsp minced garlic
  • 3 Tbsp tuna extract (or fish sauce)
  • 2 Tbsp soy sauce for soup
  • 3 cups dashi or anchovy broth (or plain water)

Hello everyone! Today, I’ll be sharing a recipe for ‘Crispy Bean Sprout Rice’ which is often called a ‘rice thief’ for its deliciousness, and a special ‘Spicy Cheongyang Pepper Sauce’. The freshly cooked rice, crunchy bean sprouts, and the spicy-sweet Cheongyang sauce! Just imagining it makes your mouth water, doesn’t it? Let’s start this recipe, perfect for a weekend treat or a special weeknight meal!

First, wash the bean sprouts thoroughly and prepare them. Place the washed bean sprouts in boiling water and briefly blanch them, keeping the lid open. The key is to boil them for just 2-3 minutes so they don’t become too soft, preserving their crisp texture. Drain the blanched bean sprouts in a colander and set aside.

Wash the rice and place it in your rice cooker. Add the appropriate amount of water for 5 cups of rice. Typically, the rice-to-water ratio is about 1:1.2, but for steamed rice, it’s good to use slightly less water. After washing the rice, place the 3 pieces of dried kelp on top of the water and cook the rice together. Cooking rice with kelp adds a wonderful umami flavor.

Once the water begins to boil and the kelp has infused its flavor for about 5 minutes, carefully remove the kelp. Be cautious not to leave the kelp in for too long, as it can make the rice sticky.

When the rice is about halfway cooked and the water is boiling, evenly spread the prepared bean sprouts over the rice. Close the lid and reduce the heat to low, letting it steam for 10 minutes. The moisture from the bean sprouts will combine with the rice to create a delicious steamed dish.
