Main Ingredients

  • 30 fresh perilla leaves

Cooking Instructions

Step 1

First, prepare about 30 perilla leaves. Wash them thoroughly under running water, ensuring that both sides are clean and free of any debris.

Step 1

Step 2

Prepare the vegetables for the seasoning base. Finely mince 1 tablespoon of green onion and finely chop 1.5 tablespoons of onion. For a touch of heat, finely chop 1 Cheongyang chili pepper (you can remove the seeds if you prefer less spice).

Step 2

Step 3

Now, let’s make the delicious seasoning for the steamed perilla leaves. In a bowl, combine 5 tablespoons of water, 1 tablespoon of soy sauce, 1 tablespoon of fish sauce for umami, 1 tablespoon of plum extract for sweetness and aroma, and 2 teaspoons of Gochugaru for a moderate level of spiciness. Stir well until all the seasonings are thoroughly mixed.

Step 3

Step 4

Add the minced green onion, minced onion, and finely chopped Cheongyang chili pepper to the prepared seasoning mix. Stir everything together evenly so the fresh flavors of the vegetables meld well with the seasoning.

Step 4

Step 5

We will cook the steamed perilla leaves using a double-boiling method. Neatly stack the perilla leaves in a steamer basket or pot suitable for double boiling. Drizzle the prepared seasoning evenly over the perilla leaves. If you like, you can add a few dried anchovies for broth at this stage for a subtle depth of flavor (you can remove these later).

Step 5

Step 6

Now it’s time to steam the perilla leaves. Cover the steamer with a lid and steam over medium heat for about 3 minutes. This allows the perilla leaves to become tender and absorb the seasoning. Be careful not to overcook, as they can become mushy. Keep an eye on the time.

Step 6

Step 7

Ta-da! Your delicious steamed perilla leaves are ready. Aren’t the fragrant leaves and the flavorful seasoning looking appetizing?
