- 1 Dungeness crab
- 2 fresh Korean blue crabs
- 2 Tbsp cooking soju
Cooking Instructions
Step 1
Begin by rinsing the Dungeness crab thoroughly under cold running water. Dungeness crabs are characterized by their slightly plumper body and less rigid shell compared to typical crabs.
Step 2
Turn the cleaned crab upside down and scrub the legs and underside meticulously using a brush or a specialized crab scrubber. Ensure you clean thoroughly along the inside of the legs and the carapace. It’s best to use cold water for this.
Step 3
Prepare the Korean blue crabs using the same cleaning method. Bring water to a rolling boil in a steamer. Once boiling, carefully place the prepared crabs into the steamer. Drizzle 2 tablespoons of cooking soju evenly over the crabs; this is a key step to removing any potential seafood odor. Cover the steamer and steam for approximately 15 to 20 minutes, or until the crabs’ shells turn a vibrant, deep red color.
