Ingredients

  • 400g fresh clams
  • 1 Tbsp soy sauce
  • 1 tsp red pepper flakes (gochugaru)
  • 1 green chili pepper (finely chopped)
  • 10g green onion or white part of leek (finely chopped)
  • 1 tsp sesame seeds
  • 1 tsp sesame oil

Begin by preparing the clams. It’s crucial to thoroughly clean any mud or debris from the clam shells. Place the clams in a bowl and rinse them multiple times under running water, gently scrubbing them with your hands. Thorough cleaning helps remove any fishy taste and enhances the clean flavor of the clams.

After washing the clams clean, place them in a pot and add enough water to cover them. Bring the water to a boil over high heat. As the clams cook, they will naturally start to open their shells.

Once the clams begin to open, turn off the heat immediately. Overcooking can make the clam meat tough. After turning off the heat, carefully remove the clams and rinse them once more under cold water. This stops the cooking process from residual heat and helps wash away any remaining impurities released from the shells.

Drain the clams well after rinsing them in cold water. Let them sit in a colander for a little while to ensure excess water is removed. This prevents the clams from becoming watery when you add the seasoning and helps them clump together less.

Now, it’s time to prepare the clams for serving. With the shells slightly open, carefully remove one of the shells, leaving the clam meat attached to the other. You can use the back of a spoon or a dull knife to gently pry the shells apart. This makes it easier to top with seasoning and eat.

In a small bowl, combine 1 tablespoon of soy sauce, 1 teaspoon of red pepper flakes, the finely chopped green chili pepper, the finely chopped green onion (or leek white part), 1 teaspoon of sesame seeds, and 1 teaspoon of sesame oil. Mix everything together thoroughly. You can adjust the proportions of these ingredients to your preference.
