Unlike hard clams (vajeoruk), clams (baekhap) don’t require purging and have a milder, cleaner taste. That’s why we find ourselves eating clams more often than hard clams. Today, we’ve made sake-steamed clams and pasta using these wonderful clams. First, I’ll guide you through Recipe 1 for clams: making Baekhap Suljjim.

Ingredients (Serves 2)

  • 1.5kg Fresh Clams
  • 5 cloves Garlic
  • 2 cups Sake or Soju
  • 3-4 Dried Peppercorns (adjust to taste)
  • Fresh Parsley, for garnish
  • Salt, to taste
  • Black Pepper, to taste
  • 300ml Water

Cooking Instructions

Start by preparing the clams. Place the clams in a bowl and rinse them thoroughly under running water 3 to 4 times to remove any dirt attached to the shells. Unlike hard clams, clams do not require a purging process, making them very convenient.

Now, let’s begin the cooking process. In a pot with sufficient depth, add all 1.5kg of the rinsed clams. Next, add 5 cloves of finely minced garlic, 3-4 dried peppercorns (feel free to add more if you like a spicier kick), 300ml of fresh water, and 2 cups of sake or soju. The alcohol plays a crucial role in eliminating any fishy odors and enhancing the clams’ natural flavor.

Cover the pot tightly with a lid and place it over medium heat. Once the liquid starts to steam and boil, begin timing and cook for an additional 15 minutes. Cooking over medium heat allows the delicious broth from the clams to infuse properly, rather than using high heat from the start.

As the clams cook, you’ll notice their shells gradually opening. When all the clams have fully opened, it’s a sign that they are perfectly cooked and ready to enjoy! If any clams remain closed after cooking, it’s best to discard them to ensure safety.

Finally, it’s time for seasoning. Season the steamed clams to your preference with a pinch of salt and freshly ground black pepper. For a beautiful finish and added aroma, sprinkle some finely chopped fresh parsley over the top. Your dish is now complete!
