Main Ingredients- 1/4 head fresh cabbage
Ssamjang Sauce Ingredients- 3 Tbsp fermented soybean paste (doenjang)
- 1 Tbsp plum extract or syrup (maesil-aek or maesil-cheong)
- 1 Tbsp oligosaccharide (for a subtle sweetness)
- 1 Tbsp sesame oil
- 1/2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp minced garlic
- 3 Tbsp finely chopped green onions or scallions (for added freshness)
- 1 Tbsp toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, carefully separate the cabbage leaves one by one. Soak the separated leaves in cold water with a splash of vinegar for about 5 minutes to wash them thoroughly. This helps to effectively remove any dirt or residue.

Arrange the washed cabbage leaves neatly in a steamer basket. Place the steamer over boiling water and steam for about 10-15 minutes, or until the cabbage is tender. You can check for doneness by inserting a fork; it should slide in easily.

While the cabbage is steaming, let’s prepare the delicious ssamjang sauce. In a small bowl, combine the doenjang, plum extract, oligosaccharide, sesame oil, red pepper flakes, minced garlic, chopped green onions, and sesame seeds. Mix everything well until uniformly combined. Feel free to adjust the sweetness by adding a little sugar or honey to your preference.
Step 4
Once the cabbage is fully steamed, carefully remove it from the steamer. Let it cool slightly for a few minutes until it’s comfortable to handle. This prevents the leaves from tearing when you touch them.
