Main Ingredients
  • 1/4 head of cabbage
  • 1/2 Tbsp vinegar (for washing cabbage)

  • 1 Tbsp salt (for boiling water)

Cooking Instructions

Step 1

First, remove the outer leaves of the fresh cabbage and carefully separate the leaves one by one. Soak the separated cabbage leaves in cold water with 1/2 Tbsp of vinegar for 5 minutes. This step effectively cleanses the cabbage of any dust or impurities.

Step 2

Pour an appropriate amount of water into a pot and add 1 Tbsp of salt. The salted water will season the cabbage as it steams and help it become more tender.

Step 3

Once the water is at a rolling boil, add the washed cabbage leaves and steam them for about 1 minute. If you prefer a softer, more well-cooked texture over crispness, steam for an additional 2-3 minutes. Adjust the steaming time based on the thickness of the cabbage and your desired tenderness.

Step 4

Crucially, do not rinse the steamed cabbage under cold water! Instead, drain it in a colander and let it cool slightly. Rinsing with cold water can diminish the cabbage’s natural sweetness and make it crispier, so it’s best to skip this step for a tender result.

Step 5

You can enjoy the cabbage warm right away, or let it cool completely, store it in an airtight container in the refrigerator, and enjoy it chilled. For extra flavor, serve with a dipping sauce made from minced scallions, garlic, chili powder, sesame seeds, sesame oil, and soy sauce. Alternatively, you can cut the cabbage into bite-sized pieces and toss them with salt, sesame oil, and sesame seeds for a delightful side dish.
