Cooking Instructions
Step 1
First, let’s prepare the versatile ssamjang. In a bowl, combine 1 Tbsp of homemade gochujang, 2 Tbsp of homemade doenjang, 1/2 Tbsp of minced garlic, 1 Tbsp of sugar, and 0.5 Tbsp of gochugaru. (Note: We’ll add the sesame oil, ground sesame seeds, cider, and water later.)
Step 2
Once the ingredients are mixed, transfer the ssamjang mixture to a saucepan or frying pan. Lightly sauté it over medium-low heat. This step helps to mellow out any raw flavors and develop a richer, more complex taste for the ssamjang.
Step 3
While stirring the sautéed ssamjang, add 1 Tbsp of ground sesame seeds, 2 Tbsp of water, and 1.5 Tbsp of cider. Mix everything thoroughly until well combined. The cider not only adds a pleasant sweetness but also helps to tenderize the sauce.
Step 4
Finally, stir in the 2 chopped Cheongyang peppers for a touch of heat. This completes your flavorful and spicy all-purpose ssamjang, perfect for whetting your appetite! Feel free to adjust the amount of chili peppers to your preference.
Step 5
Now, let’s prepare the star ingredient: the cabbage. Wash fresh cabbage leaves thoroughly. Cut them into bite-sized pieces and arrange them in a steamer. It’s recommended to remove the tough core of the cabbage before steaming for a more tender result.
Step 6
Place the prepared cabbage in the steamer, cover, and steam for about 10 minutes. The cabbage is ready when it turns a vibrant green color and is tender when pierced with a fork. Once cooked, remove from heat and let it cool slightly. Be careful not to overcook, as it can become mushy.
Step 7
Your perfectly steamed cabbage rolls and homemade versatile ssamjang are now ready to be enjoyed! Simply place a spoonful of the ssamjang on the warm cabbage, wrap it, and savor a delicious meal. This dish is also wonderful served with a variety of other fresh greens for an even more delightful experience. Enjoy your meal!
