Main Ingredients- 1 bunch Bok Choy (approx. 300g)
- 1 Red Chili Pepper
- 1/2 Green Chili Pepper
- 10cm Green Onion (scallion)
- Pinch of Salt (for blanching)
Chinese-Style Sauce- 2.5 Tbsp Soy Sauce (approx. 35g)
- 1.5 Tbsp Chili Oil (approx. 8g)
- 1 Tbsp Oyster Sauce (approx. 15g)
- 1 Tbsp Sugar (approx. 12g)
- 1 Tbsp Vinegar (approx. 8g)
- 1/2 Tbsp Minced Garlic (approx. 10g)
- 2.5 Tbsp Soy Sauce (approx. 35g)
- 1.5 Tbsp Chili Oil (approx. 8g)
- 1 Tbsp Oyster Sauce (approx. 15g)
- 1 Tbsp Sugar (approx. 12g)
- 1 Tbsp Vinegar (approx. 8g)
- 1/2 Tbsp Minced Garlic (approx. 10g)
Cooking Instructions
Step 1
Thoroughly wash the fresh bok choy under running water. Trim the base slightly and then cut each stalk in half lengthwise. This ensures the sauce penetrates well and cooks evenly.

Finely mince the red chili and green chili peppers after removing the seeds – these add a lovely color. Also, finely chop the white part of the green onion (about 10cm length) for a touch of freshness and texture.

Bring a pot of water to a rolling boil with a pinch of salt. Carefully add the prepared bok choy and blanch for a very short time, about 30 seconds to 1 minute. Be careful not to overcook, as you want to retain its crispness. Immediately drain the bok choy and rinse under cold water to stop the cooking process. Gently squeeze out any excess water.
