Hambak Steak Meets Janchi Guksu: A Surprisingly Delicious Noodle Combination
This recipe creates a comforting noodle dish, ‘Gogi Guksu’ (Meat Noodles), using leftover Hambak steak for a unique twist. While not traditional meat, it captures the essence and savory flavor. It’s a delightful fusion that’s ‘Not Bad,’ but truly unexpectedly delicious, perfect for a hearty meal or a special occasion.
Ingredients- Generous amount of anchovy and kelp broth
- 1 leftover Hambak steak (cold)
- 1 serving of noodles (medium-thin or thin)
- Seasoning sauce (to taste)
Cooking Instructions
Step 1
First, prepare the noodles. Bring a large pot of water to a rolling boil and add the medium-thin or thin noodles. Cook for about 8-9 minutes, or according to package directions, until al dente. Once cooked, immediately rinse the noodles under cold running water to firm them up and drain well. This step ensures the noodles remain chewy and don’t become mushy.

Next, prepare the Hambak steak. Lightly grease a frying pan and gently pan-fry the leftover Hambak steak over medium-low heat until golden brown on both sides. Once warmed through, remove the steak and slice it lengthwise into long, thin strips. This shape allows it to meld beautifully with the broth. Aim for slices about 0.5 cm thick.
Step 3
Now, it’s time to warm the noodles and infuse them with broth. To pre-warm the noodles in the serving bowl and prevent a sudden temperature shock, ladle some hot anchovy broth over them first. Then, add the drained noodles back into the broth pot and boil for another moment. This helps the noodles absorb the rich flavor of the broth, creating a deeper taste. Once the broth comes to a boil, carefully pour it, along with the noodles, back into the serving bowl. The noodles will gently warm up and become tender.

Finally, arrange the sliced Hambak steak attractively on top of the hot noodles and broth. Add your prepared spicy and savory seasoning sauce to your preference. For extra flavor and texture, you can garnish with crumbled seaweed (gim), chopped green onions, or sesame seeds. Now, mix everything together with your chopsticks – the noodles, steak, and sauce – and enjoy this uniquely delicious meal!
