Main Ingredients- 2 fresh squid, cleaned
- 1/6 Korean radish (approx. 200g)
- 1/2 block firm tofu
- 1 Korean green chili pepper (Cheongyang chili)
- 1/2 stalk green onion
- 5 cups anchovy-kelp broth (approx. 1L)

- 2 Tbsp soup soy sauce (Guk-ganjang)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/4 tsp salt (adjust to taste)

Cooking Instructions
Step 1
First, prepare the squid. Clean it thoroughly by removing the skin and innards, then rinse under cold water. Cut the squid into bite-sized pieces. Avoid cutting them too small, as this can diminish the chewy texture. Set aside.
Step 2
Peel the radish and slice it into thin strips, about 0.5cm thick. Cut the tofu into 1.5cm cubes. Thinly slice the green onion and green chili pepper diagonally. You can separate the white and green parts of the green onion for aesthetic appeal.
Step 3
Pour the 5 cups of anchovy-kelp broth into a deep pot. Add the julienned radish, 1 Tbsp gochugaru, 2 Tbsp soup soy sauce, and 1 Tbsp minced garlic. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 minutes, or until the radish becomes translucent and tender. Make sure to dissolve the gochugaru well to prevent clumps.
Step 4
When the radish is sufficiently cooked and tender, add the prepared squid, cubed tofu, and diagonally sliced green chili pepper and green onion to the pot. The soup’s color will change slightly as the squid cooks. Bring it to a rolling boil over high heat for a short time.
Step 5
Once the squid is fully cooked (approximately 2-3 minutes), reduce the heat to low and adjust the seasoning. Soup soy sauce alone might not be enough, so add about 1/4 tsp of salt to taste. You can also add a pinch of black pepper if desired. Once seasoned to your liking, turn off the heat immediately and serve hot!
