Spring’s Essence! Fragrant Wild Garlic Pickle
Wild Garlic Pickle Recipe to Boost Your Appetite
Wild garlic, with its pungent spiciness and subtle fragrance, is rich in allicin, making it excellent for recovering energy and boosting vitality. Here’s a delicious wild garlic pickle recipe to awaken your spring appetite.
Main Ingredients for Wild Garlic Pickle- 100g fresh wild garlic
- 1/2 ripe apple
Cooking Instructions
Step 1
Rinse the fresh wild garlic thoroughly under running water to remove any dirt or debris. Gently shake off excess water and set aside. Be careful not to wash too vigorously, as this can diminish its aroma.
Step 2
Fresh ingredients are key to a delicious pickle! Wash the ripe apple thoroughly and prepare it.
Step 3
Cut the apple half into quarters, keeping the skin on, and carefully remove the core and seeds. The seeds can sometimes impart a bitter taste.
Step 4
Peel and rinse the onion. Slice it into chunky pieces to allow the pickling brine to penetrate well.
Step 5
Remove the stem from the red chili pepper, wash it, and deseed it. Slice into quarters to add a pleasant spiciness to the pickle. For an extra kick, you can use a Cheongyang chili pepper.
Step 6
In a pot, combine 70ml soy sauce, 70ml water, and 100ml vinegar. Add the piece of dried kelp, the chunkily sliced onion, and the red chili pepper. This is the base for your flavorful pickle brine.
Step 7
At this stage, add half of the quartered apple (2 pieces) to the pot and bring to a boil. The apple will release a subtle sweetness, softening the overall flavor of the pickle.
Step 8
Place the cleaned and drained wild garlic into your chosen storage container. Avoid packing it too tightly, as this will help the brine seep in more effectively.
Step 9
Once the brine in the pot begins to boil, immediately remove the dried kelp to prevent it from becoming slimy. Let the hot brine cool slightly before carefully pouring it over the wild garlic in the container. You can add the remaining apple pieces at this point as well. For the best flavor, refrigerate for 2-3 days before serving. Enjoy your homemade wild garlic pickle!
