Making a Refreshing Dalae Muchim with Spring Season Dalae
Today, I’m sharing a recipe for Dalae Muchim (seasoned Korean wild chives)! While usually made with soy sauce and chili powder, today we’re trying a gochujang (Korean chili paste) base, similar to how we make seasoned)+(Nodding) (a type of edible plant). This gochujang-based dressing is a delightful combination and quite delicious. Come try this unique take on Dalae Muchim!
Main Ingredients- 1 bunch fresh Dalae (Korean wild chives)
Sweet & Sour Gochujang Dressing- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Maesil Extract (Plum Syrup)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar
- 1 Tbsp Toasted Sesame Seeds, ground (or crushed)
- 1 Tbsp Corn Syrup (or Oligodang)
- 0.5 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Maesil Extract (Plum Syrup)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar
- 1 Tbsp Toasted Sesame Seeds, ground (or crushed)
- 1 Tbsp Corn Syrup (or Oligodang)
- 0.5 Tbsp Soy Sauce
Cooking Instructions
Step 1
1. Prepare the fresh Dalae. First, carefully trim off any dirt or wilted leaves. Then, rinse the Dalae thoroughly under cold running water several times to ensure all dirt is removed. After draining, cut the Dalae into bite-sized pieces, about 3-4 cm in length.

2. Let’s get an idea of the quantity of the chopped Dalae. This amount, when loosely filled into about 3 paper cups, is approximately 2-3 servings.

3. Let’s make the delicious dressing! In a bowl, combine 1 Tbsp Gochujang, 1 Tbsp Maesil Extract, 1 Tbsp Sugar, 1 Tbsp Vinegar, 1 Tbsp Corn Syrup, and 0.5 Tbsp Soy Sauce. Mix them well. For the best flavor, it’s highly recommended to grind or crush the sesame seeds before adding them. This releases their nutty aroma and enhances the taste significantly compared to whole seeds!

4. With the delicious dressing and fresh Dalae ready, you’re almost done! Now it’s time to combine these two ingredients to create a wonderful dish.

5. Add all the prepared dressing to the Dalae and gently toss. Mixing it by lightly tossing upwards with your hands will help the seasoning coat the Dalae evenly, making it even more delicious. For an extra touch, sprinkle some more toasted sesame seeds on top for added nuttiness. Your beautiful Dalae Muchim is now complete!

6. You can adjust the seasoning ratios to your personal preference. If you prefer it more sour, add a little more vinegar. If you like it sweeter, add more Maesil Extract or sugar.
