Fragrant Wild Chive Sauce Ingredients

  • 40g fresh Korean wild chives (Dallae)
  • 10 Tbsp soy sauce (for seasoned dishes)
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp perilla oil (Deulgireum)
  • 1 Tbsp sesame seeds

Additional Ingredients for a Rich Bibimbap

  • 3 servings cooked rice
  • A little shredded egg garnish
  • A little sprout salad for garnish

Cooking Instructions

Step 1

Prepare the fragrant wild chives. Gently remove any soil from the roots, keeping the root ends intact if they have soil. Rinse the dallae thoroughly under running water. Once drained, finely chop the dallae into small pieces. Don’t discard the roots; they are packed with nutrients!

Step 1

Step 2

If the bulbous part of the dallae is particularly large, it might have a strong spicy flavor. In this case, chop it into even smaller pieces for a milder taste. Be meticulous with chopping.

Step 2

Step 3

Now, let’s make the heart of your bibimbap: the sauce! In a bowl, combine the chopped dallae with all the sauce ingredients: soy sauce, oligosaccharide, gochugaru, perilla oil, and sesame seeds. Mix everything well with a spoon until thoroughly combined. This sauce is delicious for bibimbap, but if you have any leftover, it’s also fantastic for dipping crispy roasted seaweed (gim)!

Step 3

Step 4

The amount of sauce you’ll need depends on how much rice you’re using and your personal preference for seasoning. Start by adding about 2 tablespoons of the sauce to one bowl of warm rice. You can always add more as you mix, adjusting the flavor to your liking. It’s great to have extra sauce prepared so you can easily adjust the seasoning for each portion of rice.

Step 4

Step 5

Finally, let’s assemble your beautiful Dallae Bibimbap. Spoon a generous amount of the prepared wild chive sauce over a bowl of warm rice. For garnish, you can add finely shredded egg omelet or a handful of fresh sprout salad for a vibrant touch and a delightful crunch. Finish by sprinkling a little more sesame seeds on top. Your visually appealing and incredibly delicious Dallae Bibimbap is now ready to be enjoyed! Savor the fresh taste of spring.
