Spring Delight! Sweet Strawberry Avocado Sandwich

Strawberries are in their prime season right now, and they’re absolutely delightful! I’ve been grabbing them from the market to enjoy fresh and even making strawberry jam. Today, I’ve crafted a special strawberry sandwich perfect for a spring picnic. The combination of sweet, seasonal strawberries and creamy avocado makes for a truly refreshing and vibrant treat.
Sandwich Ingredients
- 12 fresh strawberries (hulled)
- 1 ripe avocado
- 1/2 fresh onion
- 2 tbsp strawberry jam
- 4 slices whole grain bread

- 3 tbsp mayonnaise
- 1 tbsp lemon syrup (or lemon juice)
- 1/2 tbsp vinegar
- Pinch of black pepper (freshly ground is best)
- Pinch of fine salt (adjust to taste)

Cooking Instructions
Step 1
First, prepare the avocado. Remove the pit and peel. Then, dice it into small pieces, about 0.5 cm in size. Aim for a chunky texture rather than a smooth mash to enhance the bite.

Next, finely mince the onion. Aim for pieces about 0.3 cm in size. If you prefer a milder onion flavor, you can soak the minced onion in cold water for about 5 minutes, then squeeze out excess water.
Step 3
In a bowl, combine the diced avocado and minced onion. Add 3 tablespoons of mayonnaise and gently mix until well combined. Be careful not to overmix, as you want to maintain some texture in the avocado.
Step 4
Season the avocado mixture with a pinch of black pepper and a small amount of fine salt, tasting as you go. Stir in 1 tablespoon of lemon syrup (or lemon juice) and 1/2 tablespoon of vinegar. Mix gently to create a smooth, flavorful avocado spread. The lemon syrup adds a touch of sweetness and brightness, while the vinegar helps preserve the avocado’s vibrant color.
Step 5
Wash the strawberries thoroughly and remove the green hulls. Slice each strawberry in half, aiming for pieces about 0.5 to 1 cm thick (you’ll need about 10-12 halves).

Take two slices of the whole grain bread and spread a thin layer of strawberry jam on one side of each slice. The jam adds a lovely sweetness that complements the strawberries.

Arrange the halved strawberries on top of the jam-covered bread slices, slightly overlapping if needed, but ensuring they look appealing. The vibrant red of the strawberries will be a beautiful centerpiece.

On the remaining two slices of bread, generously spread the prepared avocado mixture. Use a spoon or spatula to ensure an even layer that reaches close to the edges. A generous amount of avocado spread will make the sandwich moist and delicious.

Lay out a piece of plastic wrap on your work surface. Place one of the bread slices with the avocado spread onto the plastic wrap, spread-side up.
