  • 1 bunch young garlic scapes
  • 1 tsp salt (for blanching)

Sweet & Sour Seasoning
  • 1 Tbsp gochujang (Korean chili paste)
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1.5 Tbsp double-strength vinegar
  • 1 Tbsp oligosaccharide (adjust sweetness)
  • 1 Tbsp sugar (adjust sweetness)
  • 1 Tbsp toasted sesame seeds (for nutty flavor)
  • 1-2 pinches salt (to taste)

Cooking Instructions

Step 1

First, prepare the young garlic scapes. Trim off the root ends and peel away any dirty outer layers.

Step 2

Cut the prepared garlic scapes into bite-sized pieces. If you prefer a less fibrous texture, you can slice the thicker, root-end parts in half lengthwise. I kept them whole to maintain a pleasant crunch, but feel free to adjust based on your preference.

Step 3

Bring a pot of water to a rolling boil and add 1 teaspoon of salt. Carefully add the prepared garlic scapes and blanch for just 1 minute. Be careful not to overcook, as they can become mushy! Immediately transfer the blanched scapes to a bowl of cold water to stop the cooking process and rinse them once or twice. Drain thoroughly in a colander.

Step 4

Now, let’s make the delicious seasoning! In a mixing bowl, combine 1 Tbsp gochujang, 1.5 Tbsp gochugaru, 1.5 Tbsp double-strength vinegar, 1 Tbsp oligosaccharide, 1 Tbsp sugar, 1 Tbsp toasted sesame seeds, and 1-2 pinches of salt. Mix well until you have a smooth, sweet, and sour dressing. You can adjust the sweetness by modifying the amount of oligosaccharide and sugar.

Step 5

Add the well-drained young garlic scapes to the prepared seasoning.

Step 6

Gently toss and mix the garlic scapes with the seasoning until they are evenly coated. Once the flavors are well combined, your delicious sweet and sour young garlic scape salad is ready! Serve it beautifully on a plate for a wonderful side dish that will awaken your palate this spring.
