  • 2 Tbsp salted shrimp (enhances savory flavor)
  • 1/2 cup plum extract (for sweetness and freshness)
  • 1/2 cup gochugaru (Korean chili flakes – for color and spice)
  • A pinch of toasted sesame seeds (for nutty aroma)

Prepare one bunch of fresh scallions. First, trim off any yellowed or messy leaves from the scallions.

Cut off the root ends of the scallions to an appropriate length. It’s best to leave them long enough so they don’t fall apart when kimchi-ing.

Arrange the washed and drained scallions neatly in a large bowl for mixing. Drizzle 1 cup of anchovy sauce evenly over the white parts (the bottom, thicker ends) of the scallions to marinate.

Gently toss the scallions with your hands once or twice to distribute the anchovy sauce. Be careful not to mix them too vigorously.
